A canopy fit-out on the back of a ute you already drive — or one built specifically for the job. Fold-up gullwing doors turn the tray into a full servery in seconds, then fold flat for the drive home. The smallest step up from a mobile setup to a real espresso bar.

Utes we fit out
What makes a good ute base
A canopy build lives or dies on tray size and payload. We're looking for four things before anything else: tray length for the layout you want, payload for the finished canopy, tub-mounting points, and — for tourers — enough ground clearance to keep the canopy clear of the terrain.

Dual-cab utes, tray or tub
Toyota HiLux, Ford Ranger, Isuzu D-Max and similar dual-cabs in tray-back or tub form both take a canopy — a tray gives more usable width, a tub keeps the factory bed if you want it back later.

Payload for the canopy
An aluminium canopy, espresso machine, fridge and battery all add up against the ute's payload rating. We check the finished weight against GVM before the canopy design is locked in.

Gullwing or single-side canopy
Dual gullwing doors open both sides for a two-queue setup or an events double-frontage; a single-side canopy keeps weight and cost down where one servery is enough.

Off-road tourer builds
Some of our utes are set up for touring as much as trading — bull bar, all-terrain tyres, raised suspension — with the same canopy fit-out built to handle corrugations and beach sand, not just bitumen.

Slide-out servery shelf
A shelf that slides out from the tray extends the counter at a pop-up and tucks flush away for the drive — standard on builds that need extra bench space without extra tray length.

New builds and re-fits
A new canopy on a bare tray, or an existing ute's canopy stripped back and re-fitted — both routes end at the same compliance sign-off before it's handed over.

Inside a ute fit-out
A canopy build works through the same five decisions as any fit-out, just compressed into the smallest footprint we build. On a ute, canopy design and machine choice tend to get settled together.

Canopy, tray and servery
An aluminium or fibreglass canopy over the tray, with gullwing doors on one or both sides that lift to become the awning. A slide-out shelf extends the counter at a pop-up and tucks away flush for the drive.

Two group, gas or battery
Two-group machines are installed, either gas or inverter/battery powered. Paired grinders sit alongside, and the power choice follows the work — gas for long days away from a plug, inverter and battery where a quiet, flueless set-up matters.
- Water & waste

Council approved sink, tanks sized to the run
A single wash-down basin, and fresh and waste tanks sized for a booked event or a day's trading rather than a full week on the road — matched to how the ute actually gets used.

Battery, inverter and shore power
A battery bank with inverter under the tray runs the machine, grinder and fridge through a trading day. Off-road tourer builds often add solar on the canopy roof to keep the bank topped up between stops.

Solid finish, decal, or bare metal
Canopy panels take a gloss paint match to the ute, a decal wrap, or a raw black powder-coat finish just as easily — the tray and canopy build the same way underneath whichever finish you land on.
